Bond strength is not the difference
This is the myth worth killing first. White and grey adhesives of the same class hold just as well as each other. Colour is a pigment and filler choice, not a strength one. Nobody should pay more for white expecting a stronger bond.
What colour changes is what you can see once the job is finished — and on the wrong tile, that is not a small thing.

Which you want depends almost entirely on the tile going on top of it and the grout going in between.
Use a light adhesive for translucent tiles
Glass mosaic is the clearest case. Light passes through the tile and picks up whatever is behind it, so a dark bed shows straight through and dulls the colour. A white or snow white bed keeps the glass reading as the colour you actually bought.
The same applies to thin marble, onyx and pale natural stone. Marble in particular is porous — a dark adhesive can telegraph through the slab as a shadow, and once it has cured there is no fixing it.
Light grout is the other reason
Adhesive squeezes up into the joints as you press tiles home. With a dark bed under white or cream grout, that squeeze-out is very hard to clean out completely, and what stays behind discolours the joint in patches.
Matching a light adhesive to a light grout means squeeze-out you miss simply does not show. On a large floor that is the difference between crisp joints and a finish that looks grubby from day one.
When the darker option is the sensible one
For dark or heavily patterned tiles, opaque porcelain, and anything with a dark grout, a light bed buys you nothing visually. Floors that will be covered wall to wall in dense tile are the same. Choose on cost and availability there, not on colour.
A quick rule
- Glass mosaic, onyx, thin or pale marble → Snow White
- Light stone, pale porcelain, white or cream grout → White
- Warm-toned stone, travertine, beige and sand grouts → Beige
- Dark tile with dark grout, or floors under dense opaque tile → colour is your choice
Do not mix colours in one field
If you run out mid-floor and finish in a different colour, the difference can show through light or translucent tiles and in the joints. Work out the quantity you need before you start and buy the whole job in one colour, in one order.
